In a mixing bowl, whisk together heavy cream, milk, sugar, and vanilla until sugar is dissolved.
Pour the mixture into popsicle molds. Add sticks and freeze for 3–4 hours or until solid.
In a microwave or double boiler, melt chocolate with coconut oil until smooth. Cool slightly (don’t let it harden).
