This seeded miso sweet potato bread is not your average loaf. Packed with roasted sweet potato, umami-rich white miso, and a crunchy seed crust, it’s the perfect balance of earthy, sweet, and savory. It’s ideal for breakfast toast, hearty sandwiches, or simply with a smear of butter and a sprinkle of sea salt.   1. Mix the dough:

    In a large bowl, whisk together flours, yeast, and salt. In a separate bowl, combine mashed sweet potato, miso paste, warm water, and maple syrup. Add to dry ingredients and mix until sticky.

     

  1. Knead and rise:

    Turn dough onto a floured surface. Knead for 8–10 minutes until smooth and elastic. Transfer to an oiled bowl, cover, and let rise for 1 hour in a warm place.

     

  1. Shape and seed:

    Punch down the dough and shape into a loaf. Press the top gently into the mixed seeds for a crusty topping.

     

  1. Final proof & bake:

    Place into a loaf pan lined with parchment. Let rise for another 30 minutes. Bake at 375°F for 45–50 minutes or until golden and hollow-sounding when tapped.

     

  1. Cool & serve
