Description

Marshmallows don’t have to be sugar bombs filled with preservatives. This healthy marshmallow recipe is soft, bouncy, and made with gut-friendly gelatin and natural sweeteners like honey or maple syrup. It's paleo, keto-friendly (with a few swaps), and surprisingly easy to make at home. Whether you’re making s’mores or topping your hot chocolate, this version will blow store-bought ones out of the water.

  1. Bloom the Gelatin

    Add 3 tbsp gelatin to ½ cup cold water in a mixing bowl. Let it bloom for 5–10 minutes.

  1. Make the Syrup

    In a saucepan, heat ½ cup water + 1 cup honey/maple syrup over medium heat. Stir occasionally. Once it starts bubbling, stop stirring and let it reach 240°F (use a candy thermometer if available).

  1. Mix It Up

    Carefully pour the hot syrup into the bloomed gelatin while mixing on low. Increase to high speed and whip for 10-12 minutes until it forms soft peaks and looks like marshmallow fluff. Add vanilla and salt in the final minute.

  1. Pour and Set

    Line a pan with parchment paper and lightly oil or dust it. Pour the marshmallow fluff into the pan and smooth it out. Let it set at room temperature for 2-3 hours.

  1. Cut and Coat

    Lift the set marshmallow slab, dust with arrowroot powder or coconut flour, and cut into cubes. Store in an airtight container.
