For the Tzimmes

Instructions

  1. Prepare the Ingredients

Preheat the oven to 325°F (165°C). Peel and slice the carrots, peel and dice the sweet potato, and chop the beef stew meat into bite-sized chunks if necessary.

  1. Cook the Beef

In a large oven-safe pot, heat olive oil over medium heat. Add the beef stew meat and season with salt, pepper, and cinnamon. Brown the meat on all sides (about 5-7 minutes). Remove the meat and set it aside.

  1. Prepare the Tzimmes

In the same pot, add the sliced carrots, diced sweet potatoes, and dried prunes (or apricots). Stir in honey, ginger (if using), and enough broth to cover the vegetables. Add the browned beef back into the pot and mix everything together.

  1. Bake the Tzimmes

Cover the pot and bake in the preheated oven for 1 hour. After an hour, stir the mixture and continue to cook for another 30 minutes until the meat is tender and the vegetables are soft.

  1. Serve

Once cooked, remove the pot from the oven. Let it rest for 10 minutes before serving. Garnish with fresh parsley if desired
